I know head and ears are wiped with same water. But, Is it permissible to wipe head with one water and then taking water again for cleaning ears?

The sunnah is to make one single Umrah per journey. Your initial umrah wouldn’t  be counted in Ramadan as you assumed your Ihram before the month of Ramadan.
