Is doing the Adhan in a beautiful Melodic voice okay like they do in Makkah?

It is recommended to beautify the athan with nice voices. It is not recommended what they do in simulating the tunes of songs or the likes of that.

I am not living in my country so I can’t understand khutbah can I recite Quran or make zikr in this time?

When you are in that blessed area, you should pray, recite the Quran and supplicate to Allah and offer a lot of solution to the Prophet salla Allahu alaihi wa sallam.
