After the 2 Sunnah, you can pray night prayers plus the witr.

3 is acceptable but you can add more and it is recommended to add as much as you can. the best of night prayer is what is at the end of the night.

After Isha fard I always pray 2 rakah sunnah and 3 rakah witr prayer. Is there any other sunnah or naafil prayer during this time that is recommended?

I have seen many people, who play with their dresses, headgears, watches, play with their fingers / thumbs during the prayer and don’t fold the hands at all, even for a second, hence disturbing the concentration of fellow worshippers? This happens on regular basis. What should be done in such cases? How to concentrate ourself during the prayer. Please note that my concern is not to count fault in other’s prayer. I just want to know how to get rid of such kind of disturbances created by them.
